...Results of tasting both side-by-side:

Ale Yeast:
Opened this one first, immediately love the funky/yeasty smell (which is just a personal preference). Great light texture/mouthfeel. Is perfectly bone-dry without leaving your mouth cotton-y. Only complaint is that the apple flavor itself is very light (especially compared to the wine yeast variant)

Wine Yeast:
This one had a much brighter apple presence. Much more straightforward a cider, but nevertheless great depth of flavor, great aroma. Came off as a bit sweeter to me than the ale variant, probably because of the stronger apple flavor.

Overall loved both, I personally prefer the ale variant, but think most would prefer the wine one.
Great day drinking material - thanks for sending them!
Andrewhttps://www.blogger.com/profile/04685592743927248260noreply@blogger.comtag:blogger.com,1999:blog-1283900765426740879.post-84191567446266948542014-04-01T21:19:06.491-07:002014-04-01T21:19:06.491-07:00Interesting, now that I think about it, I think ge...Interesting, now that I think about it, I think getting a feel for your apple blends and yeast strains would be the biggest factor in putting together a good dry cider. I was working with gifted fresh cider so I don't know the proportions, but I hope you learned some good things from your experiment.Wattshttps://www.blogger.com/profile/03473401861739198423noreply@blogger.comtag:blogger.com,1999:blog-1283900765426740879.post-65724613325758284182014-03-20T09:17:58.732-07:002014-03-20T09:17:58.732-07:00Great info on hard cider!
